1. Start with Room Temperature Butter

Cold butter leads to lumpy frosting. Let it sit out for at least 30 minutes before you begin.

2. Sift Your Powdered Sugar

Lumps in powdered sugar create lumps in your frosting. Always sift through a fine-mesh sieve.

3. Add Liquid Slowly

Whether cream, milk, or extracts — add a tablespoon at a time. You can always add more, but you can't take it out.

4. Beat Longer Than You Think

Buttercream needs at least 5 full minutes of beating to become light and perfectly fluffy.
